武夷岩茶(Wuyi yancha)  武夷岩茶(Wuyi yancha) 条形乌龙茶之一。产于福建省崇安县南的武夷山岩崖之间而得名。茶树分布于岩壑山谷之间,日照短,相对湿度大,岩石风化成的砂砾壤土富含矿物质,是岩茶色、香、味别具风韵的独特自然条件。有岩茶和洲茶之分。山岩上所产的称岩茶,品质特优;平地与沿溪两岸产的称洲茶,品质稍次。岩茶分岩水仙与岩奇种两大类。岩奇种品类繁多,采自名岩上的菜茶制成的称正岩奇种(或称奇种);采自偏岩者称名种(现已无此名称)。奇种又有名枞奇种和单枞奇种(简称名枞和单枞)。 武夷岩茶外形条索粗大壮实,色泽沙绿蜜黄,部分呈蛙皮状小白点,有鲜润光泽,称宝色。具活、甘、清、香的风韵,称岩韵,叶底淡绿黄亮,叶缘红边或红点,称青叶红镶边。 鲜叶以中开面3-4叶为最适,嫩梢完整,无机械损伤。传统手工制法分晒青、凉青、做青,炒青、初揉、复炒、复揉、水焙(即毛火),摊放后簸扇与拣剔、足火、炖火等工序。
