肉毒梭菌分子式:CAS号:性质:又称肉毒梭菌(Clostridium botulinum)。革兰氏阳性厌氧菌。梭菌(Clostridium)的一个种。有鞭毛,有运动,无荚膜。在冷极端形成卵圆形芽孢。所有菌株发酵葡萄糖,形成含有醋酸和酪酸化产物。水解明胶,每一菌株都产生内毒毒素。根据毒素抗原性的差异。水解明胶,每一菌株都产生内毒素。根据毒素抗原性的差异,分为A、B、C(C1和C2)、D、E、F、G7型。A、B、E和F型能引起人体肉毒中毒症。C型和D型只引起人类以外的动物的中毒。G型在被特殊噬菌体溶化后才产生毒素。广泛存在于土壤、海洋和淡水等中。在中国,A、B、E型均有发生,以A、B型为主。最适产毒温度范围为20~35℃,45℃以上生长繁殖和产毒均受到抑制。发生肉毒温度范围为20~35℃,45℃以上生长繁殖和产毒均受到抑制。发生肉毒中毒,大多由植物性食品(主要是豆、谷类发酵食品,如豆酱、喜鼓、面酱等),也有鱼类、蔬菜罐头等引起。肉毒中毒以对称性脑神经损害的症状为特征,先出现视力模糊、眼睑下垂、眼球震颤等,同时出现语言障碍、咀嚼与吞咽困难、头下垂、四肢无力等。因肉毒毒素对热不稳定,在100℃加热10~20min或80℃加热45~60min,可以破坏。发现中毒,应及早治疗,愈早愈好。
