红曲米分子式:CAS号:性质:又名赤曲米,福米。是一种中国传统的微生物来源的食用色素之一,在1637年出版的《天工开物》一书中已有详细记述。通常使用的微生物菌种有紫红曲霉(Monascus purpureus)、亚克红曲霉(M. anka)、拜加红曲霉(M. barkeri)等。将菌株接种于浸湿、蒸熟的大米上,于30℃静置培养,经干燥后即成。中国多用亚克红曲霉经固体发酵法制得。该菌种能分泌多种呈色物质,约有18种之多,其中有潘红、梦那红、梦茄玉红、亚克黄素、潘红胺、梦那玉红胺等。红曲米的外表为棕红色到紫色米粒,断面为粉红色。质地轻脆、无霉变味。可用于配制酒色、糖果、熟食肉制品、乳腐、花色酱、冷饮、果冻和膨化食品等。并有一定食疗保健作用。
