茴香醛 又名大茴香醛。学名对甲氧基苯甲醛。无色至浅黄色液体。分子量136.15。密度1.12g/cm3。熔点2℃。沸点248℃。闪点12l℃。折射率1.5710- 1.5740。在水中溶解度为0.3%。微溶于丙二醇、甘油。溶于大多数有机溶剂。以l:7溶于50%乙醇。具有特有的类似山楂的气味。 生产方法:主要采用氯甲基化法。以苯甲醚为原料,在甲醛和氯化氢存在下,进行氯甲基化反应,生成对甲氧基氯化苄,然后与乌洛托品成盐,再经盐酸水解、分离、水洗、减压蒸馏而得。 用途:醛类合成香料。主要用作山楂、葵花、紫丁香等香精的香基。也是新刈草、银白金合欢花、金合欢、香水草等香精的调合香料。并且是铃兰香精的助香剂,桂花香精的修饰剂。
