葛根素 大豆素碳链葡萄糖苷。它存在于豆科植物野葛的根中。葛根素为无色结晶；熔点203～205℃；在水和有机溶剂中溶解度都不大，加热可溶于水、甲醇、乙醇，但不溶于乙醇乙酯、氯仿、苯；不被酶解，也不易被稀酸水解，只有用缓和的氧化反应，例如臭氧的氧化降解或混合三氯化铁水溶液加热氧化水解，才能被分解，生成糖。葛根素配基的分子上无邻羟基对的结构，C3、C5位上也无羟基，因此不能与某些金属盐类试剂（如铝盐、铅盐、锆盐等，常用来鉴别黄酮类化合物）产生络合反应而显色；但可与酚类试剂如重氮盐、福林试剂（磷钨酸和磷钼酸）等显色。 葛根中的黄酮类化合物是异黄酮的衍生物，主要有：葛根素、葛根素木质糖苷、大豆素－4′,7－二葡萄糖苷、大豆素、大豆苷，其中以葛根素最重要，是主要有效成分。结构式分别为： 中医常用葛根为祛风解表药，主要用于表疟发热无汗、头痛项强和斑疹不透等症。葛根中所含黄酮类化合物，有扩冠、增加冠脉流量及降低心肌耗氧量等作用。市售愈风宁心片是由葛根乙醇浸膏制成的片剂，能治疗伴有头痛项强的高血压症、心绞痛和突发性耳聋等。
